Up until now, I was convinced the best brownies were my mascarpone brownies. Well, I just had a revelation! These Zucchini Brownies are simply the best! The chocolate and orange flavor is divine and the crunchy mix of roasted seeds complements perfectly the fudgy consistency.
The Zucchini taste is undetectable in the final product, but they succeed to keep the cake moist, giving it this delicious fudgy texture. The initial recipe (discovered on one of my favorite blogs, Love & Lemons) uses coconut oil, but I preferred to use a more neutral aroma, and I used cold-pressed sunflower oil (bought from Darvari Schit/Monastery in Bucharest). I had a feeling that orange extract would be perfect in combination with chocolate, so I replaced the vanilla extract. I am so happy with the final result! Chocolate + orange extract = Christmassy brownies, perfect for this time of the year. Actually, perfect for any time of the year! :)
Although the sun these days is not a booster for a Christmas atmosphere, My Lady S and I thought of a way to change that. Every evening we chose an arts&crafts tutorial from Instagram and we cut, glue, and paint little angels, stars, cards and so many more. When we don’t do crafts, we bake cakes and pies. My Lay S is such a lovely, adorable little version of me and I am so very proud of her!

Ingrediente
- 2 tablespoons ground flaxseeds
- 5 tablespoons filtred water
- 270g all-purpose flour (sifted)
- 200g brown sugar
- 65g cocoa (sifted)
- 1 teaspoon baking powder
- 1/2 teaspoon fine Himalaya Salt
- 125ml cold pressed sunflower oil
- 1 teaspoon orange extract
- 350g grated zucchini (do not drain or squeeze)
- 80g chocolate chips (dark/vegan ) (plus extra for topping)
- 50g seed mix (flaxseeds, sunflower, pumpkin)
Mod de preparare
1. | Preheat the oven to 180 degrees Celsius. |
2. | Grease a baking dish and line it with parchment paper. |
3. | In a small bowl, stir the flaxseed and water and set aside for 5 minutes to get a thicker consistency. |
4. | In another bowl mix the dry ingredients: flour, sugar, cocoa, baking powder, salt. |
5. | In a large bowl, mix together the sunflower oil, orange extract, and flaxseed mixture, then stir in the zucchini. |
6. | Add the dry ingredients to the zucchini mixture and stir well. Let rest for 1 minute and stir again, making sure to incorporate everything. Add the chocolate chips. |
7. | Pour the batter into the prepared pan and use a spatula to smooth the top. Sprinkle with more chocolate chips and seeds mix. |
8. | Bake for 45-50 minutes. Remove from the oven and let cool for at least 1 hour. |
9. | Enjoy! |
